Storing & Freezing Homemade Fudge
Fudges shelf life on the counter or in the refrigerator.
Fudge stored at room temperature in an airtight container will last 7 to 14 days. Fudge stored in the refrigerator can last 2 to 3 weeks.
Fudge stored in an airtight container at room temperature will "ripen" over the first 24 hours.

Some recipes will indicate how the fudge should be stored. Some recipes do not indicate refrigerator storage. Fudge stored in the refrigerator should be placed in an airtight container. Fudge stored on the counter should be placed in an airtight container unless the recipe states otherwise.
Some fudge and ingredients do not freeze as well as others.
As a rule, denser fudge freezes better than lighter fudge and the texture in some fudge might change slightly when thawed.
Imitation vanilla does not hold its flavor well when frozen, and spices like nutmeg and cloves tend to intensify during freezing.
Fudges shelf life in a freezer.
Fudge can be stored in the freezer for about 3 months if properly wrapped. The temperature in the freezer should be as close to 0°F as possible. Place the fudge inside the freezer rather than on the door shelves, which are warmer.
Fudge can be stored longer in a manually defrost freezer than in a frost-free freezer. Frost-free freezers dry out the food and cause freezer burn sooner.
Pack fudge for freezing in the proper container.
Fudge should be frozen in freezer containers or freezer bags to prevent ice crystals and freezer burn. Fudge stored in a sturdy airtight container will last longer than just wrapped in foil in the freezer. Freezer containers should be moisture and vapor resistant and should not be prone to cracking or breaking at low temperatures. Containers should provide protection against absorbing flavors or odors and should be easy to label. Suitable packaging for freezing fudge include freezer-grade plastic bags, plastic containers or glass containers, tins and heavy-duty aluminum foil. Cardboard containers are not recommended for storage as the flavor and aroma from the box may be absorbed by the fudge.
When using a freezer storage bag remove as much air from the bag as possible to reduce moisture and the chance of freezer burn.

Freeze fudge only after it has completely cooled and any icing or glaze has completely dried.
Fudge can be individually wrapped or the entire batch can be wrapped in one package. When freezing an entire batch, it is best to freeze it in a block, then cut it into squares after it has been thawed. Fudge should first be tightly double-wrapped in plastic wrap then placed in an airtight container or freezer bag. If storing in layers in a container, separate each layer with waxed or parchment paper.
When freezing several different types of fudge, freeze them in separate containers to maintain the best flavor.
Label the container.
Make sure to label the container with the name of the fudge and the date that they were placed in the freezer.
Thawing frozen fudge.
Defrost fudge in the refrigerator with their wrappings in place. The moisture that forms during defrosting will then form on the wrapper, not the fudge. Once thawed, allow the fudge to stand at room temperature for 15 to 20 minutes.
