Angel Food Cake Tips
To get the best cake height when making angel food cake, do not grease or flour the pan unless the recipe calls for it.
After filling an angel food cake pan with batter, run a knife through the batter to remove any air pockets.
To produce a marbling effect, fill the pan with batter, add a few drops of food coloring on top and use a butter knife to swirl the color through the batter.
Bake angel food cake on the lowest oven rack to prevent the top from getting too brown.
