Creamy icing which is ideal for using on a Hummingbird Cake.
2 (8 ounce) cream cheese, room temperature
1 cup butter or margarine, room temperature
1 pounds confectioners (powdered) sugar
2 teaspoons vanilla
1 cup chopped pecans
In a large bowl, mix cream cheese, butter and vanilla on medium speed until creamy. On low speed, gradually add confectioners sugar, beat until just creamy -- do not over beat. Stir in pecans or use pecans to garnish the cake.
Use to decorate, ice and fill a Hummingbird Cake.
The icing can be divided for decorating, icing and filling the cake. For decorating, remove some icing and adjust using confectioners sugar to achieve the correct consistency. For filling, remove some icing and stir in 1/2 of the pecans. For icing the cake, use the remaining icing to ice the cake smooth, if desired. Garish the cake with remaining pecans after decorating.
