Cranberry Apricot Glaze
1 cup cranberries
1/4 cup fresh orange juice
1/3 cup apricot preserves
2 tablespoons vanilla
Combine cranberries, orange juice, preserves and vanilla in a saucepan. Bring to a boil, reduce to a medium heat. Continue to cook for 2 minutes, stirring occasionally. Remove from heat and strain. Cool to room temperature.
Glaze can be refrigerated in an airtight container for 1 weeks.
