Mandarin Orange White Chocolate Filling
10 ounce white chocolate
2 cups whipping cream
2 (10 ounce) cans mandarin oranges
3 tablespoon orange juice
Drain oranges, then puree. Blend in orange juice. Melt chocolate over low heat with 1/2 cup whipping cream, constantly stirring until smooth. Cool. Whip remaining cream until light fluffy. Fold in to cooled white chocolate. Add mandarin oranges mix well. Cool 1 hour.
Refrigerate in an airtight container.
