Lord Baltimore Filling


1 pound confectioners’ (powdered) sugar, sifted
1/4 cup butter or margarine, room temperature
3/4 cup solid vegetable shortening
1/4 cup water
1 tablespoon clear vanilla extract
1/8 teaspoon almond extract
1/2 cup macaroon cookies, crushed
1/2 cup pecans, chopped
1/4 cup blanched almonds, chopped
12 candied cherries, quartered
2 teaspoons lemon juice
1 teaspoon orange zest


In a medium bowl, cream butter, shortening and extracts. Gradually add confectioners’ sugar alternatively with water. Mix thoroughly on medium speed (hand mixer), or low speed (stand mixer) until smooth and creamy. Do not over mix or mix on high speed. Add macaroon crumbs, pecans, almonds, cherries, lemon juice, and zest. Fold together until thoroughly blended.

Use with Lord Baltimore Cake and Crusting Buttercream Icing.
