Toffee Butter Cookies
4 dozen cookies
1 cup butter or margarine, room temperature
1 cup granulated sugar
2 large eggs
2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) package milk chocolate English toffee bits
Preheat oven to 350°F. In a large mixing bowl, combine butter, sugar, egg and vanilla. Beat at medium speed until creamy. Add flour, baking soda and salt. Beat on low speed until well mixed. Stir in toffee bits by hand. Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
Bake for 10 to 12 minutes or until lightly browned. Cool on cookie sheet for 1 minute. Remove cookies from cookie sheet and cool on a wire rack.
