1 cup butter or margarine
3/2 cup confectioners sugar
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 cup finely chopped pecans
Preheat oven to 350°F. In a saucepan, melt butter until light brown in color (be careful not to scorch) over low heat. Pour into a small mixing bowl and chill until firm. Cream browned butter with sugar and vanilla until light and fluffy. Gradually add flour until blended. Stir in pecans. Chill several hours then shape into 1 inch balls. Place on ungreased cookie sheets.
Bake 20 minutes or until edges are a light golden brown. Remove from oven. Sprinkle with confectioners sugar, if desired. Cool 2 minutes and remove from cookie sheet. Continue to cool on cooling grid. Sprinkle with additional confectioners sugar, if desired.
