Russian Tea Cakes


4 dozen


1 cup margarine or butter, room temperature
1 cup confectioners’ sugar, sifted
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup nuts, finely chopped
confectioners’ sugar, sifted


Preheat oven to 400°F. In a mixing bowl, mix together thoroughly butter, sugar, vanilla. Sift together and stir in flour and salt. Mix in chopped nuts. Chill dough. Roll into 1" balls. Place 2 1/2" apart on ungreased baking sheet. Bake for 10 to 12 minutes until done, but not brown. While still warm, roll in confectioners’ sugar. Cool. Roll in sugar again.
