Pineapple Coconut Spritz Cookies
6 dozen cookies
1 cup apple butter, softened
1 cup granulated sugar
1 large egg
3/4 cup sweetened flaked coconut*
1 teaspoon vanilla extract
1/2 teaspoon pineapple extract
3 cups all-purpose flour
1 teaspoon baking powder
Preheat oven to 375°F.
In a large mixing bowl, combine butter and sugar together. Beat at medium speed until light and fluffy. Beat in egg, coconut, and extracts. Gradually add flour and baking powder to creamed mixture. Mix just until combined.
Shape dough into small logs and place dough into cookie press. Using desired disk, press cookies onto ungreased cookie sheet. Bake for 10 to 12 minutes or until edges are lightly browned. Remove from oven and cool on baking sheets for 1 minute. Remove from cookie sheet and place on wire rack until cool.
* Chop coconut if shredded coconut is substituted for flaked coconut.
