Pecan Spritz Cookies
2 1/2 dozen cookies
1 1/2 cups butter, room temperature
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup pecan flour, or finely ground pecans
red and green decorating sugar or other holiday sprinkles
Preheat oven to 375°F. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla extract. Blend in dry ingredients. Fit a cookie press with the desired template and fill with unchilled dough. Press out cookies 2" apart onto ungreased cookie sheets. Sprinkle tops with colored sugar or sprinkles.
Bake 8 minutes or until firm but not brown. Cool 2 minutes on cooling grid. Remove cookies from cookie sheet and continue to cool on grid.
To make 1 cup pecan flour, process 1 1/4 cups pecans in a blender or in a small food processor.
