Peanut Butter Chip Cookies


2 1/2 dozen cookies


1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1/2 cup creamy peanut butter
1/3 cup peanut butter baking chips, melted
1/4 cup vegetable shortening
1/4 cup butter or margarine, room temperature
1 large egg
1 1/4 cup all-purpose flour
3/4 teaspoon baking soda
1/2 tablespoon baking powder
2 tablespoons milk
1 cup peanut butter and chocolate baking chips
1 tablespoon vegetable shortening


In a large mixing bowl, cream together sugars, peanut butter, peanut butter chips, shortening, butter and egg. Sift together flour, baking soda and baking powder. Stir into cream mixture. Add milk and continue stirring until creamy and well blended. Cover and refrigerate at least one hour.

Preheat oven to 375°F.

Shape dough into 1 1/4" balls. Place about three inches apart on an ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake 9 minutes or until light brown. Cool 2 minutes and remove from cookie sheet. Continue to cool on cooling grid.

Place peanut butter and chocolate chips in a small shallow microwave safe bowl. Add shortening. Melt in microwave 50 seconds. Remove and stir until blended and creamy. Holding cookie in the center, roll edge of cookie in chocolate and peanut butter mixture. Place on wax paper and let set until chocolate edge is firm or place in refrigerator for 5 minutes.


Store at room temperature in a sealed container.
