Orange Coconut Cookies

3/4 cup shortening or butter
1 cup granulated sugar
1/2 cup brown sugar, firmly packed
2 large eggs
1/3 cup orange juice
2 tablespoons grated orange peel
2 cups all-purpose flour
2 teaspoons baking powder
1 cup flaked coconut

Preheat oven to 350°F. Using pan release, lightly grease a 15 1/2" x 10 1/2" x 1" jelly roll pan.

In large mixing bowl, cream shortening, sugars and eggs until light and fluffy. Blend in orange juice and peel. Mix in flour and baking powder. Stir in coconut. Spread in prepared jelly pan.

Bake for 20 minutes, or until light golden brown and wooden pick inserted in center comes out clean. Place on a wire rack and cool completely.

Prepare orange glaze recipe. Spread glaze evenly over baked layer. Cut into 2" x 1" bars.
