Orange Blossom Spritz Cookies


5 dozen cookies


3/4 cup butter or margarine, room temperature
1/2 cup granulated sugar
1 large egg
2 teaspoons orange peel, finely shredded
1/2 teaspoon vanilla extract
1 teaspoon baking powder
2 1/4 cups all-purpose flour
colored sugar, decorative candies, or nuts (optional)
Orange Icing (optional)


Preheat oven to 375°F. In a large mixing bowl, cream butter and sugar at medium high speed until light and fluffy. Add egg, orange peel, vanilla and baking powder. Beat until well blended. Beat in as much flour as you can. Stir in any remaining flour by hand. Do not chill dough. Shape dough into small logs and place dough in a cookie press. Using a desired disk, press shapes onto cool ungreased cookie sheets. If desired decorate with colored sugar, decorative candies, or nuts.

Bake 10 to 12 minutes or until light golden brown. Remove from oven and cool on baking sheets for 2 minutes. Remove from cookie sheet and place on wire rack until cool. If desired, drizzle with Orange Icing.
