1 box lemon cake mix
2 large eggs
1/3 cup vegetable oil
Preheat oven to 375°F. In a large bowl, combine cake mix, eggs and oil and eggs. Stir by hand until moistened. Shape dough into a 1 inch ball. Place 2 inches apart on ungreased cookie sheet. Flatten to 1/4 inch with bottom of a glass dipped in flour.
Bake 6-8 minutes or until edges are a light golden brown. Cool 2 minutes and remove from cookie sheet. Continue to cool on cooling grid. Ice cookies and decorate as desired.
Lemon cake mix can be substituted with any flavor of cake mix. Add chopped walnut, pecans, or almonds, coconut or your favorite flavorings if desired.
