4 dozen cookies
1 cup butter or margarine, room temperature
1 cup granulated sugar
1 teaspoon baking soda
2 large eggs
1 (6 ounce) can frozen lemonade concentrate, thawed
3 cups all-purpose flour
Preheat oven to 400°F.
In a medium mixing bowl, with an electric mixer on medium speed, cream butter and sugar. Beat in soda, eggs and 1/2 cup lemonade concentrate. Beat in as much of the flour as you can. Stir in any remaining flour with a wooden spoon.
Drop dough by rounded teaspoons 2" apart on ungreased baking sheets. Bake for 6 to 7 minutes or until lightly brown around the edges. Remove from oven and cool on baking sheets for 1 minute. Remove from cookie sheet and place on wire rack. Brush hot cookies lightly with remaining lemonade concentrate. Sprinkle with granulated sugar. Let cool.
