Hazelnut Butter Balls


2 cups all-purpose flour, sifted
1/4 cup granulated sugar
1/2 teaspoon salt
1 cup butter or margarine, room temperature
2 teaspoons vanilla extract
2 1/2 cups hazelnuts or filberts, finely chopped
confectioners’ (powdered) sugar


Preheat oven to 350°F. Lightly grease baking sheets using Pan Release.

In a large mixing bowl, combine flour, sugar, and salt together. Mix in butter and vanilla. Add 2 cups finely chopped hazelnuts. Mix well. Shape dough into 1/2" balls. Roll half of the ball in the remaining hazelnuts and place on prepared baking sheets.

Bake for about 25 to 30 minutes. Cool 5 minutes on cooling grid. Remove cookies from baking sheet and roll plain half of the cookie in sifted confectioners’ sugar. Place on cooling grid to cool.
