Glazed Orange Spice Cookies
3 dozen cookies
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup shortening
1/2 cup butter or margarine, room temperature
1 cup granulated sugar
1/2 cup almonds, finely chopped
3 tablespoons grated orange zest
Orange Marmalade Icing
1/2 cup sliced almonds for garnish (optional)
Preheat oven to 350°F (175° C). In a mixing bowl, combine flour, baking powder, nutmeg, cloves, cinnamon, and salt. Set aside.
In a large mixing bowl, beat shortening and butter with an electric mixer until smooth. Add sugar and beat until combined. Mix in chopped almonds and orange zest. Gradually add the flour mixture to the butter mixture and stir until combined.
Place cookie dough on a lightly floured surface and roll into a rectangle about 13" long. Cut the dough into 3 1/2" squares using a fluted pastry wheel, sharp paring knife or cookie cutter. Place the cookies on an ungreased baking sheet.
Bake for 12 minutes or until lightly browned. Cool 2 minutes then remove cookies from cookie sheet and cool completely on wire rack.
Prepare Orange Marmalade Icing. When cookies have cooled, spread icing on the cookies and garnish with sliced almonds, if desired.
