Date Nut Fingers


3 dozen cookies


3/4 cup flaked coconut
1/2 cup nuts (pecans or walnuts), finely chopped
1/2 cup (1 stick) butter or margarine
1 cup granulated sugar
1 cup dates, finely chopped
1/2 cup nuts (pecans or walnuts), finely chopped
1 large egg, beaten
1 teaspoon vanilla extract
2 1/2 cups crispy rice cereal


In a small bowl, combine coconut and 1/2 cup chopped nuts. Set aside.

In a saucepan melt butter. Add sugar, dates, 1/2 cup nuts, and egg. Cook 10 minutes over low heat, stirring so it does not scorch. Remove from heat and stir in vanilla. Pour over cereal. Mix well. Let cool to the touch.

Grease hands with butter or keep hands moistened with cold water. Shape cookie mixture into fingers or balls the size of walnuts and roll in coconut mixture. Place on sheet of waxed paper, refrigerate for 1 hour.


Store in a sealed container in the refrigerator. Bring to room temperature before serving.
