Date Nut Bars
2 dozen bars
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter or margarine, room temperature
1 cup light brown sugar, firmly packed
3 large eggs
1 teaspoon vanilla extract
8 ounces (about 1 1/2 cups) dried dates, finely chopped
1 cup pecans or walnuts, chopped (optional)
Preheat oven to 350°F. Grease a 13" x 9" x 2" baking pan using Pan Release. In a small bowl, sift flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream butter and brown sugar. Add eggs and vanilla. Beat well. Gradually blend flour mixture into the creamed mixture. Stir in chopped dates and nuts. Pour into prepared baking pan. Bake for 25 minutes. Cool on wire rack. Cut into bars.
