Chocolate Snowflake Cookies


1 1/4 cup granulated sugar
1/2 cup vegetable oil
4 ounces unsweetened chocolate, melted
4 large eggs
1 teaspoon almond extract
1 tablespoon clear vanilla extract
2 1/2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
3/4 cup confectioners’ sugar


Preheat oven to 350°F. In large bowl, combine sugar, oil and chocolate. Add eggs and extracts then mix well. Combine flour, baking powder, and salt in a separate bowl then add to chocolate mixture in thirds, mixing well after each addition. Cover and chill dough 2 hours or longer. Make 1-inch balls and roll them in powdered sugar. Or on a lightly floured surface, roll out dough 1/4-inch thick. Using lightly floured snowflake cutters, cut out cookies and place on cookie sheet. Sprinkle heavily with confectioners’ sugar.

Bake 10-12 minutes or until edges are a light golden brown. Cool 2 minutes and remove from cookie sheet. Continue to cool on cooling grid.
