Chocolate Roll-Out Cookies


2 dozen cookies


3/4 cup butter or margarine, room temperature
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 squares (3 ounces) unsweetened chocolate, melted and cooled
2 teaspoons baking powder
3 cups all-purpose flour


Preheat oven to 375°F.

In a large bowl, cream butter and sugar with an electric mixer until light and fluffy. Beat in eggs and vanilla. Mix well. Blend in melted chocolate. Combine baking powder and flour. Gradually add one cup at a time to the butter mixture, mixing after each addition. Beat until smooth. Cover and chill until firm, about 1 hour.

Roll dough 1/8" thick. Dip cutter in flour, cut and place on an ungreased cookie sheet.

Bake 8 to 10 minutes or until light golden brown. Cool 2 minutes on cooling grid. Remove from cookie sheet and continue to cool on grid.
