Chocolate Cherry Blossoms
5 dozen cookies
3 (1 ounce) squares unsweetened baking chocolate
3 tablespoons butter or margarine, room temperature
1 1/2 cups granulated sugar
1 1/2 cups all-purpose flour
2 large eggs
1 1/2 teaspoons baking powder
1/3 cup dried cherries, chopped
1/3 cup granulated sugar
1 (11 ounce) bag (60) cherry cordial crème-filled chocolate kisses, unwrapped*
Preheat oven to 300°F. Place unsweetened chocolate in medium microwave-safe bowl. Microwave on 50% power, stirring every 30 seconds, until melted. Add butter. Stir until butter is melted. Cool 10 minutes. In a large bowl, combine melted chocolate, 1 1/2 cups sugar, 3/4 cup flour, eggs and baking powder. Beat at medium until well mixed. Add remaining 3/4 cup flour and dried cherries. Beat on low speed just until well mixed. Place 1/3 cup sugar in small bowl. Shape dough into 1" balls. Roll in sugar. Place 2" apart onto ungreased cookie sheets.
Bake for 10 to 12 minutes or until top is cracked and set. Immediately press 1 cherry chocolate kiss into each cookie. Remove cookies from cookie sheet and cool on a wire rack until chocolate is set.
The cookie dough may also be rolled in powdered sugar for a frosty white crinkled effect.
*Substitute your favorite variety of chocolate kisses.
Increase chopped dried cherries to 1/2 cup for extra cherry flavor.
Store between sheets of waxed paper in an airtight container for up to 5 days.
