Chocolate Chunk Pudding Cookies


7 dozen cookies


1 cup butter or margarine, room temperature
3/4 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 package (4 ounce) instant pudding, any flavor
2 teaspoons vanilla extract
2 large eggs
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 package (12 ounces) semi-sweet chocolate chunks or chips


Preheat oven to 375°F.

In a large mixing bowl, beat butter, sugars, dry pudding and vanilla on medium speed until well blended. Add eggs and mix well. Gradually add flour and baking soda, beating until well blended after each addition. Stir in chocolate chunks.

Drop dough by teaspoonfuls 2 inches apart onto ungreased cookie sheets.

Bake until golden brown, 8 to 10 minutes.

Remove from oven and cool on baking sheets for 1 minute. Remove from cookie sheet and place on wire rack until cool. Store cookies in an airtight container for a week or freeze.
