Chocolate Chunk Cookies


4 dozen cookies


1/2 cup butter or margarine, room temperature
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup rolled oats
1 1/4 cups chocolate chunks
1/2 cup nuts, chopped (optional)


Preheat oven to 350°F. Using pan release, lightly grease baking sheets.

In a medium mixing bowl, combine butter and sugars. At medium speed beat until creamy. Beat in egg and vanilla. In a small mixing bowl, combine flour, salt, baking powder and baking soda, then mix well. Add flour mixture and oats to butter mixture beating continually until combined. Stir in chocolate chunks and nuts.

Drop batter by teaspoonfuls onto prepared cookie sheets. Bake until lightly browned, 8 to 10 minutes.

Remove from oven and cool on baking sheets for 1 minute. Remove from cookie sheet and place on wire rack until cool. Store cookies in an airtight container for a week or freeze.
