Caramel Spritz Cookies
5-6 dozen cookies
1 cup vegetable shortening
3/4 cups dark brown sugar, firmly packed
3/4 cups granulated sugar
2 large eggs
2 teaspoons vanilla extract
3 1/2 cups sifted all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
Preheat oven to 350°F.
In a large mixing bowl, cream shortening, sugars, eggs and vanilla. Beat on medium speed until light and fluffy. Gradually add flour, baking soda and salt. Beat on low speed until blended. Fit a cookie press with the desired template and fill with dough. Press out cookies 1" apart onto ungreased cookie sheets.
Bake 10 to 12 minutes or until edges are lightly browned. Cool 2 minutes on cooling grid. Remove cookies from cookie sheet and continue to cool on grid.
