Cappuccino Chocolate Chip Cookies

Yield

5 dozen cookies

Ingredients

2 teaspoons instant coffee granules
1 tablespoon milk
1 cup brown sugar, firmly packed
1 cup butter or margarine, room temperature
1/2 cup granulated sugar
1 (1 ounce) square semi-sweet baking chocolate, melted, cooled
2 large eggs
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 (12 ounce) package (2 cups) real semi-sweet chocolate chips

Directions

Preheat oven to 375°F. In a small bowl, dissolve coffee granules in milk. In a large mixing bowl, beat butter and sugar on medium speed until well mixed. Add coffee mixture, cooled melted chocolate, eggs and vanilla. Beat until well mixed. Add flour, baking soda, cinnamon and salt. Beat on low speed until well mixed. Stir in chocolate chips by hand. Drop dough by rounded teaspoonfuls, 2" apart, onto ungreased cookie sheets.

Bake for 8 to 10 minutes or until golden brown. Cool on cookie sheet for 2 minutes. Remove cookies from cookie sheet and cool on a wire rack. Cool completely.
