This is a simple butter cookie that can be used in a cookie press, as a drop cookie or made into a roll and sliced. Just be sure to chill the dough thoroughly so it keeps its shape while baking.
3 dozen cookies
1 cup butter or margarine, room temperature
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 large egg
2 2/3 cups all-purpose flour
1/4 teaspoon salt
In a large mixing bowl, cream together butter, sugar and vanilla until light and fluffy. Beat in egg. Combine the flour and salt. Stir into the sugar mixture. Cover dough, and chill for at least one hour. Chill cookie sheets.
Preheat oven to 400°F. Press dough out onto ungreased, chilled cookie sheets.
Bake 8 to 10 minutes or until lightly golden at the edges. Cool 2 minutes. Remove cookies from cookie sheet and continue to cool on grid.
