Applesauce Raisin Cookies


4 dozen cookies


2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
1/4 cup butter or margarine, room temperature
1/4 cup shortening
1 cup granulated sugar
1 large egg
1 cup applesauce
1 cup raisins
1 cup walnuts, coarsely chopped


Preheat oven to 350°F. Grease cookie sheets using Pan Release. In a mixing bowl mix together the flour, salt, baking powder, baking soda, cinnamon, nutmeg, and cloves. Mix well. Set aside.

In a large mixing bowl, mix butter, shortening, and sugar together. Add egg and mix well. Add flour mixture alternately with the applesauce to the butter mixture. Stir in the raisins and nuts. Drop mixture by rounded teaspoonfuls onto the prepared cookie sheets.

Bake for 10 to 12 minutes or until lightly browned. Remove from oven and cool on cookie sheets for 1 minute. Remove from cookie sheet and place on wire rack until cool.
