Almond Sandies


1 cup butter or margarine
1 cup granulated sugar
1 cup confectioners’ (powdered) sugar
1 cup vegetable oil
2 large eggs
1 teaspoon almond extract
3 1/2 cups all-purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups almonds, finely chopped
1 package English toffee bits


Preheat oven to 350°F.

In a large mixing bowl, cream together butter and granulated sugar. Add confectioners’ sugar, oil, eggs and almond extract. Mix well. In a medium mixing bowl, combine flours, baking soda, cream of tartar and salt. Add to mixture slowly until well mixed. Add almonds and English toffee bits. Mix well. Shape into golf ball size balls and roll in sugar. Place on cookie sheets, leaving 2" between cookies. Bake for 12 to 14 minutes.
