Almond Crescents Cookies


3 dozen cookies


1/4 cup almonds, finely ground
1 cup butter or margarine, room temperature
1/2 cup granulated sugar
2 teaspoons vanilla extract
1/4 teaspoon almond extract (optional)
1/2 teaspoon salt
2 1/2 cups all-purpose flour
granulated sugar


In a mixing bowl, cream butter and sugar together. Stir in ground almonds, vanilla, salt and flour. Chill dough until firm.

Preheat oven to 350°F. Using pan release, lightly grease baking sheets.

Break off 1" round pieces of dough and roll into sticks 1/2" thick. Bend sticks into a crescent shape. Place on prepared cookie sheets, leaving 2" between cookies.

Bake 15-20 minutes, remove before cookies turn brown. Cool 2 minutes and remove from cookie sheet. Roll each cookie in granulated sugar. Continue to cool on cooling grid.
