Almond Cream Spritz Cookies
5 dozen cookies
1 cup butter or margarine, room temperature
1 (3 ounces) package cream cheese, room temperature
1/2 cup granulated sugar
1/2 teaspoon almond extract
1 teaspoon vanilla extract
2 cups all-purpose flour
almonds, finely chopped
Preheat oven to 375°F. In a large mixing bowl, cream together butter and cream cheese. Add sugar and extracts. Beat until light and fluffy. Gradually add flour and beat until blended. Cover and chill for 30 minutes until dough is firm but not stiff. Fit a cookie press with the desired template and fill with dough. Press out cookies 1" apart onto ungreased cookie sheets. Sprinkle cookies with chopped almonds.
Bake 10 to 12 minutes or until lightly brown around the edges. Cool 2 minutes on cooling grid. Remove cookies from cookie sheet and continue to cool on grid.
