A delicious chocolate center with a light texture.
4 1/2 cups (1 1/3 pound) real milk chocolate, finely chopped
1/3 cup heavy cream
1/3 cup half and half
1 teaspoon vanilla extract
Melt milk chocolate in a double boiler or in a bowl held over hot water making sure the hot water does not touch pan containing chocolate. In a saucepan, combine cream and half and half. Heat to scalding (not boiling). Cool mixture to 130°F. Add mixture to melted chocolate all at once, beating until smooth and well blended. Blend vanilla into mixture. Chill in refrigerator until candy is firm but pliable. Beat with mixer until candy is light and fluffy then return to refrigerator until firm. Form into 3/4 inch balls and immediately dip in chocolate.
