White Chocolate Almond Fudge
1 1/2 pounds
1 (12 ounce) package (2 cups) white chocolate chips
2/3 cup sweetened condensed milk
1 1/2 cups slivered almonds, coarsely chopped, toasted*
2 teaspoons vanilla extract
Line an 8" x 8" square baking pan with aluminum foil, extending foil at least 2" over ends of pan. Set aside.
In medium saucepan, melt white chocolate chips with sweetened condensed milk over very low heat, stirring constantly, until mixture is smooth. Remove from heat. Stir in toasted almonds and vanilla. Spread into prepared pan.
Cover and refrigerate until firm. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into squares.
*To toast almonds, place in a shallow baking pan. Bake at 350°F (175°C) for 10 to 15 minutes or until almonds are lightly browned, stirring occasionally. Cool.
For best results, do not double this recipe.
