Pistachio Nut Fudge


16 pieces


1 (16 ounce) package confectioners’ (powdered) sugar
2/3 cup unsweetened baking cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoons vanilla extract
1/8 teaspoon rum flavoring
1/2 cup (1 stick) butter or margarine, sliced
1/2 cup pistachio nuts, chopped


Line a 8" x 8" baking pan with aluminum foil, extending foil at least 2" over ends of the pan and set aside.

In a large microwave-safe bowl, combine powdered sugar, cocoa and salt. Stir in milk, vanilla and rum flavoring. Mix well. Place butter slices on top. Microwave on high (100%) for 2 minutes. Beat until smooth, then stir in nuts. Spread in prepared pan.

Refrigerate until firm, about 1 hour. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into 2" squares.
