Pecan Fudge

24 pieces

1 pound (3-3/4 cups) confectioners’ (powdered) sugar
6 tablespoons butter
1/2 cup cocoa
1/4 cup milk
1 tablespoon vanilla extract
1/4 teaspoon salt
1 cup chopped pecans, toasted*

Line an 8" x 8" baking pan with aluminum foil, extending foil at least 2" over ends of pan. Lightly butter foil. Set aside.

In a medium saucepan, heat sugar, butter, cocoa, milk, vanilla and salt over low heat, stirring until smooth and mixture begins to thicken. Stir in pecans. Spread mixture quickly in the prepared pan.

Cool until firm. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into squares.

Additional Information

To toast pecans, spread pecans out on a baking sheet and bake at 350°F for 4 or 5 minutes.
