Easy Chocolate Layered Fudge
1 cup butterscotch, peanut butter or white chocolate chips
1 (14 ounce) can sweetened condensed milk - divided use
2 tablespoons butter, room temperature
1 cup semi-sweet chocolate chips
1 teaspoon vanilla extract - divided use
Line an 8" x 8" baking pan with aluminum foil, extending foil at least 2" over ends of pan. Set aside.
In medium microwave-safe bowl, place choice of chips (butterscotch or peanut butter or white chocolate chips), 2/3 cup sweetened condensed milk and butter. Microwave at high (100%) for 1 minute or until chips are melted and mixture is smooth when stirred. Stir in 1/2 teaspoon vanilla. Immediately pour and spread evenly into prepared pan.
In second medium microwave-safe bowl, place chocolate chips and remaining sweetened condensed milk. Microwave at high (100%) 1 minute or until chips are melted and mixture is smooth when stirred. Stir in remaining 1/2 teaspoon vanilla. Immediately pour and spread evenly over first layer. Cool.
Cover and refrigerate until firm. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into squares.
For best results, do not double this recipe.
Store in tightly covered container in refrigerator.
