Butterscotch Orange Fudge


32 pieces


1 cup walnuts, chopped
1 (7 ounce) jar marshmallow creme
1 1/2 cups granulated sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 teaspoon salt
1 (11 ounce) package butterscotch flavored chips
1 teaspoon orange extract
1 teaspoon grated orange peel


Line a 13" x 9" baking pan with aluminum foil, extending foil at least 2" over ends of pan. Spread 1/2 of the chopped walnuts evenly on the bottom of the pan.

In a heavy saucepan, combine marshmallow creme, sugar, evaporated milk, butter and salt. Bring to a full rolling boil over moderate heat, stirring constantly. Boil for 5 minutes, stirring constantly. Remove from the heat. Add butterscotch chips the cooked mixture and stir until the chips are melted. Stir in orange extract and grated orange peel. Pour into the prepared pan and sprinkle with remaining chopped walnuts.

Chill until firm. Using the extended edges, lift fudge from pan. Place on cutting board. Peel off foil. Cut into squares.
