Coconut Bars


2 pounds confectioners’ sugar
1 can evaporated milk
1 (14 ounce) bag coconut
1 cup butter or margarine, melted
1 teaspoon vanilla extract
1 (12 ounce) package chocolate chips
2 tablespoons vegetable oil


In large bowl, combine together confectioners’ (powdered) sugar, milk, coconut, butter and vanilla. Spread evenly on a large greased cookie sheet. Chill in refrigerator overnight. Take out and cut into 1-inch bars.

Melt chocolate chips and vegetable oil over low heat. Dip bars in chocolate. Cool on waxed paper.
