Chocolate Nut Balls


120 pieces


3 cups creamy peanut butter
2 pounds confectioners’ (powdered) sugar
2 cups butter or margarine, room temperature
4 teaspoons vanilla extract
3 (12 ounce) packages chocolate chips


In a medium bowl, mix together peanut butter, sugar, butter and vanilla. Cover and refrigerate for 1 hour.

Working with a small amount of dough, roll peanut butter mixture into balls about the size of a quarter, keeping the remainder refrigerated until needed.

Melt the chocolate in a double boiler setup (either a double boiler or a bowl over a saucepan with hot water, making sure the bowl does not touch the water) over medium heat. Remove from heat. Using toothpicks or small forks, dip the balls into the chocolate. Set on wax paper then refrigerate.
