Cookies and Cream Cheesecake


12 servings


1 chocolate cookie crust recipe
1 (1/4 ounce) envelope unflavored gelatin
1/4 cup cold water
1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
3/4 cup milk
1 cup whipping cream, whipped
1 1/4 cups cream sandwich cookies, coarsely chopped


Prepare chocolate cookie crust recipe. Press onto the bottom of a 9" springform pan. Refrigerate.

In a small saucepan, soften gelatin in cold water. Stir over low heat until dissolved. In a large mixing bowl, combine cream cheese and sugar, mixing at medium speed with an electric mixer until well blended. Gradually add gelatin mixture and milk, mixing until well blended. Chill until the mixture is thickened but not set. Fold in cream whipped to soft peaks.

Reserve 1 1/2 cups of the cream cheese mixture and pour the remaining cream cheese mixture over the prepared crust. Top with coarsely chopped cream sandwich cookies and the reserved cream cheese mixture. Chill until firm.
