Chocolate Velvet Cheesecake
pecan vanilla wafer crust recipe
16 ounces cream cheese, room temperature
1/2 cup brown sugar, firmly packed
2 large eggs
6 ounces semi-sweet chocolate chips, melted
2 tablespoons milk
1 teaspoon almond extract
2 cups sour cream
2 tablespoons granulated sugar
Preheat oven to 325°F. Prepare vanilla wafer crust recipe for a springform pan.
In a large mixing bowl, combine cream cheese and brown sugar. Using an electric mixer, mix at medium speed until well blended. Add the eggs, one at a time, mixing well after each addition. Blend in the melted chocolate chips, milk and almond extract. Pour over the prepared crust. Bake for 35 minutes. Remove from oven.
Increase oven temperature to 425°F. In a medium bowl, combine the sour cream and sugar. Carefully spread over cheesecake. Bake for another 10 minutes.
Loosen cake from rim of pan and allow to cool before removing the rim. Chill after removing from pan.
