Chocolate Swirl Cheesecake
chocolate cookie crust recipe or
chocolate graham crust recipe
2 packages (16 ounce) cream cheese, room temperature, divided
1/2 cup sugar, divided
2 large eggs, divided
4 squares semi-sweet baking chocolate, melted, slightly cooled
1 teaspoon vanilla
Preheat oven to 350°F.
In a large mixing bowl, beat 1 package of the cream cheese, 1/4 cup of the sugar and 1 egg with an electric mixer on medium speed until well blended. Stir in melted chocolate. Pour into crust. Beat remaining cream cheese, sugar, egg and vanilla until well blended. Place spoonfuls over chocolate batter. Cut through batters several times with a knife to marbleize.
Bake for 40 minutes or until center is almost set. Loosen cake from rim of pan and cool. Once cooled remove rim and place cooled cake on serving plate.
Refrigerator for 3 hours or overnight before serving.
