Marshmallow Blonde Brownies

Ingredients

1/2 cup butter or margarine
1 cup butterscotch chips
2/3 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 cups miniature marshmallows
1 cup semi-sweet chocolate chips

Directions

Preheat oven to 350°F (175°C). Grease a 13" x 9" baking pan using Pan Release.

Using a microwave-safe bowl, melt the butterscotch chips and butter together in the microwave on medium (50%) power, stirring every 30 seconds until smooth. Set aside to cool.

In a large bowl, stir together the brown sugar, eggs, and vanilla. Mix in the melted butterscotch chips, then the flour, baking powder, and salt until smooth. Stir in the marshmallows and chocolate chips last. Spread the batter evenly into the prepared baking pan.

Bake for 15 to 20 minutes or until a toothpick inserted halfway between the edge and center comes out clean. Do not overbake. Center should be set (slightly sticky) but not dry. Cool on wire rack before cutting into bars.
